3 Ingredient Peanut Butter Cookies, my way with 5 ingredients!
I love cooking and I'm guessing that now that I'm retired, I'm sure to be spending a little more time in the kitchen.
I love to eat out but cooking has always been fun to me, especially when I have the time and am not too tired which is why the hubby asked me tonight after dinner if I was tired I looked at him thinking, what the heck is he asking me? I told him I'm not tired and he replied "That's good because I want Peanut Butter Cookies". Ah, that I can do!!
I can't take credit for this recipe being I found it for the first time on the Allrecipes Website. This site is my "go to" whenever I need cooking inspiration and hard cooking facts. I've made these cookies many times but I usually add 1 extra ingredient but thanks to a recent shopping trip, I decided to add one more. I think those 2 extra ingredients are so worth making this recipe a little more complex.
Heat up the oven to 350 degrees
Blend all the ingredients in one bowl until smooth. I use my hand mixer for this because I'm a bit lazy.
- 1 Cup of Sugar - I usually do 1/2 cup regular sugar and 1/2 cup brown sugar
- 1 Cup of Smooth Peanut Butter
- 1 Egg
- A dash of Vanilla - I love the extra flavor it gives.

Create balls of dough with your hands and place on a cookie sheet (no greasing needed but I use a silicone mat) making sure to space them a bit.
Next take a fork and squish them to be more flat by using a fork in a criss cross pattern. Sprinkle them lightly with white sugar which will give them a slight crunch on the top.
Bake them for about 8 minutes. It will seem like that's not long enough but you're going to want these cookies to be soft and gooey. To rush the process I took them carefully off the cookie sheet and transferred them to a plate to put in the refrigerator to cool. The hubby wanted those cookies and he wanted them now.
Here comes the 5th ingredient.... the one I had in my pantry because on a whim I added it to my shopping cart on Sunday morning. Marshmallow Fluff!!
I created sandwich cookies by spreading fluff between 2 cookies! Yum! I could only eat one because they were very rich but the hubby ate several. They were so good, I'm sure to make these again.
